Aloo bhindi fry is a dry fry side dish that goes well with rice and rotis. Bhindi is otherwise called okra/ ladies finger and aloo is the Hindi word for potatoes. In this recipe, I am microwaving the ladies finger, but you can also dry fry it on the flame. As a variation you can add chopped tomatoes to this dish instead of amchoor powder. Also some people like the flavour of coriander powder, if so you can add that also to enhance its taste.
Anyways I like it the way it is……now let’s get started….
Ingredients
- 1 Potato, cut into cubes
- ½ kg. Ladies finger, chopped
- 1 Onion, cut finely
- ¾ tsp. Red chilli powder
- ¼ tsp. Amchoor powder
- 1 tsp. Jeera (cumin seeds)
- 2 tbsp. Oil
- Salt, as per taste
- 2 tbsp. Coriander leaves, chopped
Method
- Clean and chop ladies finger into bite size pieces. In a microwavable bowl, add the ladies finger and toss it with 2 teaspoons of oil. Microwave on high for 2-3 minutes stirring in between. This will help reduce the stickiness.
- Chop onions finely and cube the potatoes. Heat a pan, add the remaining oil and splutter cumin seeds.
- Add finely chopped onion and fry till they turn transparent. Add the cubed potatoes and sprinkle some salt. Cook for 3-4 minutes.
- Next add the microwaved ladies finger and more oil if needed and check for salt. Cook covered for 5 minutes.
- To this, add red chilli powder and amchoor powder. Give a stir for a minute. Finally add chopped coriander leaves.
- Aloo bhindi fry is ready to be served.
