Apple Burfi is a delicious treat for the ones with sweet tooth. This fudge-like barfi is also super easy to make. This year for Diwali I made this sweet treat for my children and it was deliciously devoured by the children. This burfi can also be stored in the fridge for two weeks in an airtight container.
Apple burfi is also vegan and gluten-free. It combines the goodness of apples and coconut making it super healthy…..well let’s forget sugar for some time. J I used freshly grated coconut but you can also substitute it with frozen coconut. The fruity taste makes for a great sweet snack without the guilt!
For this delicious treat, you will need….
Ingredients
- 3 cup Apples, peeled and shredded
- 1 cup Coconut, freshly grated coconut
- 1 ½ cup Sugar
- ½ cup Walnuts, chopped
- ¼ tsp. Cardamom, powdered
- 1 tbsp. Pistachios, sliced for garnishing
Method
- In a non-stick frying pan add grated apples and coconut and sauté for some time. Next add sugar and cook over medium heat, until mixture starts coming together and apples turn very tender. Keep stirring so that the mixture doesn’t get burnt. This should take about 7-10 minutes.
- Add cardamom powder and walnut, mix it well. Cook stirring continuously until mix has a soft dough consistency. This should take about 2-3 minutes. Then turn of the heat.
- Pour the mixture into a greased plate while burfi mixture is still hot. Spread it evenly about ¾ inch-thick in a square shape. Press the mixture with spatula to make it firm. Sprinkle the pistachios and lightly press.
- While burfi is still warm cut them in about one inch square.
- Allow the burfi to cool for about two hours and hold its shape.
- After it has cooled down and firm, you can remove the burfi from the plate.
- Apple burfi is ready for serving.
