Aviyal is a traditional dish of South India, which is served for every ‘Sadya’, be it Onam or Vishu or any other festivity. Simple and easy to make, it is a delicious and nutritious combo of mixed vegetables cooked in coconut mixture, seasoned with coconut oil and curry leaves. In this recipe, I have used raw mangoes to bring the sour taste to the dish. You can also use sour curd or tamarind to enhance the sour taste to it. My personal favourite is adding tamarind juice……yumm…I love its taste…..
Ingredients
- 1 no. Raw Banana
- ½ cup Yam
- 2 nos. Drumstick
- ¼ cup Cluster Beans
- ¼ cup Snake gourd
- One cup chopped Carrot
- 1 cup Cucumber
- ½ cup Raw mango cut lengthwise or 5 tbsps. Sour curd, beaten
- ½ tsp. Turmeric powder
- 1 cup grated Coconut
- 5 nos. Green chillies
- ½ tsp. Cumin seeds
- 1 sprig Curry leaves
- A tbsp. Coconut oil
- Salt to taste
Method
- Peel and cut vegetables lengthwise into 2″ long pieces long.
- Next wash, cover and cook the vegetables with 1/2 cup water, turmeric powder and salt till the veggies are half cooked. (Note :Do not overcook the veggies, since many different kinds of veggies are used. Add the vegetables to the boiling water according to the cooking time, the longer cooking vegetables first and the quicker ones last.)
- In a mixer grinder, grind coconut, green chillies and cumin seeds into a coarse paste with little water.
- After the vegetables are half cooked, add the ground coconut paste into it. Cover the pot and cook for 5 minutes.
- Remove the lid and then add beaten curd, curry leaves and gently toss for few minutes. (Note :If you have added raw mango along with the vegetables don’t add curd.)
- Next cook on low heat for few more minutes till the veggies are well cooked. Take care not to mash the vegetables.
- Add the curry leaves and pour coconut oil over the top and mix well.
- Remove the dish from the fire and keep covered till serving.
