Besan Chilla is a famous North Indian breakfast recipe which is also popularly known as vegetarian omelette because of its colour and texture. This gram flour based pancake is similar to the South Indian dosa varieties, I would say Uthappam as it is topped with vegetables such as tomatoes, onions, coriander etc. You can also top it with any vegetables of your choice such as chopped capsicum, carrots, beans etc. Ajwain seeds play an important role in this recipe as they aid in digestion. It is also best to mix the batter and leave it for 30 minutes before cooking which will help in soaking up the gram flour properly and not leave you bloated.

Ingredients
- 1 cup Besan / Gram flour
- ¼ tsp. turmeric
- ¼ tsp. Caraway seeds / Ajwain
- Salt to taste
- ½ cup water, or as required
- ½ onion, finely chopped
- 2 tbsp. Coriander leaves, finely chopped
- ½ Tomato, finely chopped
- 1 inch ginger, finely chopped
- 1 green chilli, finely chopped
- 5 tsp. oil, for roasting
Method
- In a large mixing bowl take the gram flour.
- Add in turmeric, ajwain and salt to taste.
- Additionally, add water and mix with the help of whisk to form a smooth batter.
- Now rest the batter for 30 minutes or more so that besan absorbs water.
- Furthermore, add in onion, tomato, coriander leaves, ginger and green chilli.
- Mix well with the help of ladle and get to a flowing consistency batter.
- Further, pour a ladleful of batter onto a hot pan and spread gently.
- Pour a tsp of oil over the chilla.
- Allow to cook on medium flame.
- Now flip the chilla and cook on both sides.
- Finally, fold the besan chilla and serve with chutney.
