Besan laddoo is a rich, sweet dessert prepared from gently roasted gram flour (besan), sugar and ghee. One important thing to remember while making besan laddoo is to roast the gram flour on a low flame to prevent it from forming lumps. Sugar should be added to the gram flour only after it is roasted well and cooled. This is my first attempt at making these laddoos and I must say……. it was an enjoyable experience.
You can make these laddoos in bulk and store them in air tight containers. This recipe I am sharing with you will make approximately 16 laddoos.
Ingredients
- 2 cups Gram flour
- ½ cup Ghee
- ¾ cup Sugar, powdered
- ¼ tsp. Green Cardamom, powdered
- Few almonds, blanched, slivered, for garnish
- Few pistachios, blanched, slivered, for garnish
Method
- In a wok, melt the ghee and add the gram flour. Stir-fry over low heat. It takes about 30 minutes to roast the flour thoroughly.
- The roasted flour gets a pasty look after roasting is done. The colour should be a light brown.
- Turn off the heat and leave the mixture to cool completely.
- Add the sugar and cardamom after the mix cools and mix well. Mix everything thoroughly.
- Shape into tight, hard balls, pressing hard inside your palm. Roll the laddoos in such a way that the surface becomes smooth.
- Decorate the top of each laddoo with almonds and pistachios. Enjoy !!
- You can store these laddoos for almost 4-6 weeks.
