When every true malayalee thinks of breakfast, their first thoughts are idli, dosa, puttu, appam or idiyappam. Idiyappam is my personal favourite. In some regions idiyappam is also called ‘nool puttu’ or ‘sevai’. Idiyappam is generally made with rice flour.
These days Idiyappam is made with brown rice flour and mostly without coconut citing health reasons. Let me tell you something… if you want to taste the real deal you go for the white rice flour Idiyappam with coconut, there is no comparison between the white n brown one, at least in my opinion. At home we usually add some sugar to the coconut and add to Idiyappam. I really love it… you can actually taste sweet juicy coconut, just thinking about it makes my mouth water, sigh!
This is a healthy and delicious green leafy vegetable pancake. You can substitute spinach for any greens of your choice. Spinach is called ‘Palak’ in Hindi. Palak dosa or Spinach dosa is an instant dosa recipe which doesn’t require much preparation. This green dosa looks very tempting and tastes awesome. It can be made with leftover Dosa batter or by using different types of flour. To make with different types of flour, you can add coarsely ground wheat flour, rice flour, oats flour or ragi flour to make this instant dosa. Oats flour is optional but it tastes awesome in this recipe. For this option you can add curd or butter milk to make the batter.
Aval oats idli is a variation of the normal idli. This is a tasty, healthy and quick recipe. It’s easy to prepare and all the ingredients are readily available in our homes.

Besan Chilla is a famous North Indian breakfast recipe which is also popularly known as vegetarian omelette because of its colour and texture. This gram flour based pancake is similar to the South Indian dosa varieties, I would say Uthappam as it is topped with vegetables such as tomatoes, onions, coriander etc. You can also top it with any vegetables of your choice such as chopped capsicum, carrots, beans etc. Ajwain seeds play an important role in this recipe as they aid in digestion. It is also best to mix the batter and leave it for 30 minutes before cooking which will help in soaking up the gram flour properly and not leave you bloated.
Every time I have leftover dosa batter, I use it to make mixed vegetable uthappam. Uthappams are an absolute hit in my house, be it breakfast or brunch or dinner. Mixed vegetable uthappam makes a delicious breakfast recipe and are a healthy option owing to all the vegetables to it. I always try to add whatever vegetables I can find in my kitchen.
In this recipe, I have mentioned about mixing the vegetables in a separate bowl and then sprinkling on top of the dosa batter while cooking, but you can also add these vegetables to the batter.
