The crunchy crust, tender texture and flavours of cinnamon makes this buttermilk quick bread an all-time favourite for adults and kids equally. Two loaves can be baked with the quantity of ingredients given below. When baking for kids, you can always use smaller loaf pans increasing the number of loaves.
As the name suggests, this quick bread can be baked quickly whenever you have guests surprising you.
Ingredients
- 4 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1⁄2 cup vegetable oil
- 1 cup sugar
- 2 cups buttermilk
- 1 1⁄2 cups sugar
- Two eggs
- 1 tbsp.ground cinnamon
- 2 tablespoons walnuts, finely chopped
- Two tablespoons raisins (optional)
Method
- Mix flour, baking soda and salt in a large bowl.
- In a small bowl combine oil and sugar; add buttermilk and eggs and mix well; stir into dry ingredients just until moistened.
- Fill 2 greased 8″x 4″x 2″ loaf pans (or five 5″x 2 1/2″ mini loaf pans) about 1/3 full.
- Combine cinnamon and sugar; sprinkle half over the batter; top the remaining batter with cinnamon-sugar; swirl batter with a knife; sprinkle with nuts.
- Bake at 350° for 45-55 minutes or until toothpick comes out clean; then remove to a wire rack.
- After the bread is cooled, cut the bread into slices.
- Buttermilk quick bread is ready to be served.
