Butternut Squash Halwa

BUTTERNUT SQUASH HALWA

Everyone likes to have sweets as a dessert after meals. Many of you do not like pumpkin or butternut squash much as a dish, but I am sure you all will definitely love to eat this butternut squash halwa.  This same recipe can be used to make pumpkin halwa (popularly known as kaddu ka halwa in Hindi) also….Here I am sharing a recipe which uses butternut squash.

Get a ripe butternut squash to make halwa. You can also make butternut squash halwa from raw butternut squash. But the ripe one is already sweet in taste, which is why it is preferred most while making any kind of sweet.

So come let’s make butternut squash halwa today for dessert.

 

Ingredients

  • 1 no. Butternut Squash
  • 4 cups full fat milk
  • 4 tbsps. Ghee/Butter
  • 10-12 tbsp. Sugar
  • 20-25 whole Cashews
  • 5-6 green cardamom, powdered finely in a mortar-pestle or about ⅓ tsp cardamom powder
  • a pinch of Saffron strands(optional)
  • handful of golden Raisins

 

Method

  • Rinse, peel and chop the butternut squash to small cubes or you can grate it.
  • In a deep thick bottomed pan, first boil milk, then add grated or chopped butternut squash to it.
  • On a low to medium flame, bring the whole mix to a boil and then simmer.
  • While the mix is simmering on a low flame, keep on stirring in between.
  • The grated butternut squash will cook in the milk and the milk will start to reduce and thicken.
  • When the milk is reduced to about three-fourths, add the ghee, sugar and powdered cardamom to the mixture.
  • Stir well and continue to simmer and cook on a low flame.
  • Keep on stirring the halwa in between. Add cashews, crushed saffron and raisins and simmer till all the milk is evaporated.
  • Switch off the burner. Serve butternut squash halwa hot or cold as desired.
