Butterscotch Falooda

BUTTERSCOTCH FALOODA

Falooda is a very popular cold beverage in Indian subcontinent. It is a version of Persian dessert known as Faloodeh. There are different versions of falooda recipe like mango falooda, rabdi falooda, firni falooda. It is a cooling summer dessert which is rich and delicious. Butterscotch falooda is made with milk, brown sugar, butterscotch essence, butterscotch sauce, sabza seeds, sev and topped with a variety of toppings. Top the falooda with butterscotch ice cream for a delicious delight, I am sure you will love it too. Ice cream toppings are optional. In this recipe, I have skipped the butterscotch ice cream.

You can make interesting flavours and variation from this butterscotch falooda recipe such as mango falooda, kesar falooda, rose falooda, pista cardamom falooda, strawberry falooda etc by changing the ingredients added. If you have a full serving of this dessert, it’s almost as filling as a good heavy meal. Only thing you don’t count here is calories in this falooda 😊

 

Ingredients

  • 250 ml Milk
  • 1/8 cup Brown Sugar
  • 2 scoops of Ice cream (preferably butterscotch, this is optional)
  • 50 gms. Rice vermicelli
  • 30 gms. Chia seeds/Sabza seeds
  • ¼ tsp. Butterscotch Essence
  • ¼ cup Butterscotch Sauce
  • 1 tsp. of Almonds and Pistachios, chopped
  • 6 tbsps. Rose syrup, for serving

 

Method

  • Soak chia seeds for 30-40 minutes.
  • Cook rice vermicelli in 2 cups of water for 2-3 minutes.
  • Drain the vermicelli and keep it in cold water.
  • Boil milk in a pan and add brown sugar to it. Keep stirring it well till it thickens.
  • Add butterscotch essence and mix well. Keep it aside.
  • To serve it, first add lots of ice to the glass.
  • Add 2-3 tablespoons of soaked chia seeds.
  • For next layer add half the amount of cooked and chilled rice vermicelli.
  • Next add butterscotch sauce.
  • Top it with chilled butterscotch milk and stir gently.
  • Now serve it with a scoop of ice cream. This step is optional.
  • Add chopped bananas, grapes and other fruits of your liking, and chopped almonds and pistachios.
  • Drizzle some rose syrup over it.
  • Enjoy chilled!!
