Homemade chicken fajitas is a quick and easy recipe. In this recipe you can substitute chicken with any kind of meat….that is the beauty of this recipe…..a feast of flavours and colours. I love chicken fajitas. This is an ideal recipe for a lazy evening and perfect for a Mexican night. It can be served with salsa, grated cheddar, guacamole, shredded lettuce, diced tomatoes or sour cream. Now let’s get right into it….
Ingredients
- 8 nos. Tortilla Wraps
- 500gms Chicken breasts
- 1 Onion
- 2 Bell peppers
- 1 Garlic clove, finely chopped
- 1 tbsp. Lime juice
- 2 tbsps. Olive Oil
- ½ tsp. Cumin
- ½ tsp. Chilli powder
- ½ tsp. Black pepper
- ½ tsp. hot pepper flakes
- ½ tsp. Salt
Toppings
- Salsa
- Sour Cream
Method
- Slice chicken breasts into thin strips.
- In bowl, mix together 1 tablespoon of olive oil, lime juice, garlic, chilli powder, cumin, hot pepper flakes, black pepper & salt.
- Add chicken strips and stir to coat, set aside.
- Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
- Cut onions into strips, also cut peppers into thin strips.
- In large non-stick skillet over medium high heat, heat remaining tablespoons of olive oil.
- Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
- Add chicken to skillet, cook, stirring for 3-4 minutes.
- Return onions and peppers to skillet; stir for about one minute.
- To serve, spoon a portion of the chicken mixture down the centre of each tortilla, top with your desired toppings, fold bottom of tortilla up over filling, fold the sides in, overlapping.
- Yummy chicken fajitas are ready to be served!!
