MANGO ALMOND SEMOLINA BREAD

Breads are very popular and enjoyed at my home by my kids, be it breakfast, lunch or dinner. For this reason, I am always trying new recipes for breads. I always prefer my kids to have healthy varieties of bread. When I tried out this bread for the first time, the comments I received from my kids is that ‘this is not bread…’, ‘It doesn’t taste like bread…’. Well, now things have changed, now my kids adore this healthy version of bread.

Mango almond semolina bread, as the name suggests is made mainly of rava or semolina and mango puree. This bread is very easy to make, it took only 10 minutes to get it in the oven. For eggless version of the bread, add one more tablespoon of mango pulp.

You can wrap and store the uneaten bread. This bread freezes well.

Ingredients

Dry Ingredients

  • 2 cups Semolina/ Sooji /Rava
  • 1 cup, Sugar
  • ½ cup Almonds, finely chopped
  • 2 tsp. Baking Powder
  • 2 tsp. Cardamom Powder
  • 1 tsp. all Spice Powder (Optional)
  • A pinch of Salt

Wet Ingredients

  • ½ cup Oil
  • 2 cups Mango Pulp
  • 1 Egg
  • 1 tbsp. Lime Juice

 

For Garnish:

  • Slivered Almonds, as needed

 

Method

  • Preheat the oven to 375°F. Spray a 9-by-5-inch loaf pan with non-stick cooking spray. Set aside.
  • Mix all the above listed ‘dry ingredients’ together until well-blended.
  • Now add the wet ingredients to the above mix and mix thoroughly.
  • Let the batter sit for 10 minutes, so that semolina can soak up the liquids.
  • Pour into the prepared pan and sprinkle the top with the almonds.
  • Bake for about 30-35 minutes. The bread is done when a tooth pick inserted into the centre of the loaf comes out clean.
  • Cool the pan on a rack until just warm; turn out of the pan onto the rack to cool completely. Serve and Enjoy!
