Every time I have leftover dosa batter, I use it to make mixed vegetable uthappam. Uthappams are an absolute hit in my house, be it breakfast or brunch or dinner. Mixed vegetable uthappam makes a delicious breakfast recipe and are a healthy option owing to all the vegetables to it. I always try to add whatever vegetables I can find in my kitchen.
In this recipe, I have mentioned about mixing the vegetables in a separate bowl and then sprinkling on top of the dosa batter while cooking, but you can also add these vegetables to the batter.

Ingredients
- ½ cup Onion, finely chopped
- 1/3 cup Capsicum, finely chopped
- ½ cup Coriander leaves, chopped
- 1 inch Ginger, minced
- 1/3 cup Tomato, finely chopped
- 1/3 cup Carrot, grated
- 2 Green chillies, minced
- 1 large bowl Dosa batter
- Oil for making uthappams
Method
- In a bowl combine onion, capsicum, tomato, grated carrots, green chillies and ginger. Sprinkle a little salt and mix it. Remember the dosa batter has salt in it already. Keep this ready before heating the dosa tawa.
- Heat a tawa and add a drop of oil and rub it with a half onion. This will help you to take the dosa from the tawa easily.
- Once the tawa is heated well, reduce the heat to medium and pour a ladle of batter. Spread the batter in a circular motion to form a thick dosa as shown in the picture. Do not spread it thin as uthappams should be thick.
- After a minute, sprinkle the vegetable mixture all over the dosa batter. Gently press it with a ladle or spatula.
- Drizzle a teaspoon of oil around the uthappam. Once the base is golden brown flip the uthappam to the other side.
- Sprinkle a little oil on the other side also and let it cook. Once it is cooked, remove the uthappam from the tawa and serve hot with chutney or sambhar.
