NUTTY DATES LADDOO

This nutty dates laddoo is a quick and healthy sweet which combines the goodness of both dates and nuts. It can be easily prepared in 15 minutes. You don’t need to add any ghee or oil or artificial sweeteners to make these laddoos. If you are not using pitted dates, you will have to remove the seeds. You can use any nuts of your choice such as cashews, pistachios, walnuts, peanuts and seeds like pumpkin seeds or seasame seeds. Also you can use choco chips, dessicated coconut, dried figs, apricots and raisins too. These nutty dates laddoo can be made either on the hob or using microwave oven.

I am sharing a recipe using microwave oven…..

 

Ingredients

  • 20 nos. large Dates, pitted
  • ¼ cup mixed Nuts (almonds, cashews, walnuts, pistachios, peanuts)
  • 1 tbsp. Dessicated coconut

 

Method

  • Dry roast the nuts for a few minutes on the stove or using the microwave. If using microwave oven, add the nuts to a microwave safe tray and microwave for 2 minutes. Make sure to stir in between, so they don’t get browned.
  • To the same pan, add dates and heat it till it turns soft. If using microwave, microwave them for 30 to 60 seconds.
  • Add desiccated coconut to the mix.
  • Knead or blend the dates in a blender and set them aside.
  • Add nuts to the blender and pulse them coarsely.
  • Mix the blended dates and nuts well together.
  • Take small portions of the blended mix and roll them to small balls.
  • You can also roll the laddoos in dessicated coconut to give it a special look.
  • Nutty dates laddoos are ready to serve!!
