Oats Upma

OATS UPMA

Oats upma is a variation to the popular South Indian breakfast upma. To make oats upma, regular rolled oats are best owing to its health benefits. Regular rolled oats have a low glycemic index than the quick oats. This quick upma can be made with easily available ingredients and can be prepared in less than 15 minutes. So I make it often either for breakfast or as a quick evening snack. My kids love this upma….and that gives me all the more reason to make it quite often.

Ingredients

  • 1 cup rolled Oats
  • 1 Onion, cubed
  • ¼ cup chopped Vegetables (carrots, beans, green peas)
  • 2 Green chillies, slit
  • 1 sprig Curry leaves
  • ¼ tsp. Ginger, chopped
  • A pinch Asafoetida/ Hing
  • ¼ tsp. Mustard seeds
  • 1 ½ tbsp. Oil
  • ½ tsp. Chana Dal
  • ½ tsp. Urad Dal
  • 2 tbsps. Nuts (Peanuts, cashews, almonds)
  • ¼ tsp. Turmeric powder
  • 2 tbsps. Lemon juice
  • 3-4 tbsps. Grated coconut
  • Coriander leaves, for garnish
  • Salt, to taste

 

Method

  • In a wide pan, dry roast rolled oats to remove the raw smell. Set this aside to cool.
  • Heat a pan with oil. Add mustard seeds to it.
  • After mustard seeds splutter, add chana dal, urad dal, mixed nuts and fry till golden brown.
  • Add hing, ginger, chilli, curry leaves to this.
  • Add chopped onions, vegetables and fry till they turn transparent.
  • Next add turmeric and fry. To the fried mix, add little water and salt and allow the vegetables to cook.
  • Again add oats, sprinkle some salt and water and mix well.
  • Reduce the flame to low, cover and cook for about 6 to 7 minutes, stirring occasionally till fully cooked.
  • If needed, sprinkle little more water, till the oats is fully cooked.
  • Add grated coconut, coriander leaves and lemon juice. Mix well.
  • Serve delicious oats upma warm.
