Peanut ukkeri or the stir-fried pulses is an inevitable Navarathri dish among Konganis. Ukkeri is very well a nivedhyam, a perfect tea time snack and a subtle side dish in a gourmet meal. This spicy peanut ukkeri is a dainty dish which also serves as a mid-day snack. Make sure you use boiled peanuts for this dish. I usually pressure cook the peanuts. Its best to be served when warm. This ukkeri is a very filling snack. My husband and I love this, a perfect tea time snack.
Let’s start with the preparation of this dish….
Ingredients
- 200 gms. Boiled raw peanuts
- 1 coconut, grated
- 2 green chillies, chopped
- 1 tsp. powdered black pepper
- 2 sprigs curry leaves
- 1 tsp. Cumin seeds
- 2 tsp. Coconut oil
- ½ tsp. Turmeric powder
- 1 tsp. Mustard seeds
Method
- Heat coconut oil in a pan.
- Add mustard seeds and allow them to splutter.
- Add cumin seeds, green chillies and curry leaves.
- Once they are fried, add turmeric powder.
- Add peanuts. Sprinkle salt and pepper for taste.
- Stir the mixture well and cover the pan for a while.
- After sometime, remove the lid and sprinkle grated coconut.
- Mix the ukkeri well and serve hot with tea.
