POHA UPMA

Poha Upma is an easy to prepare and delicious breakfast snack. It is also famous as Aval Upma in many regions of India and it is made with flattened rice (beaten rice) which has all goodness of rice. It is an ideal food for kid’s lunch box and one of the most common breakfast recipes in India where rice is very commonly used.

For poha upma, you can add any vegetables of your choice. I have mentioned only a few in this recipe. Please do try out variations and let me know in the comments box below.

For this recipe, we will require….

 

Ingredients

  • ½ cup Onions, finely chopped
  • 2 cups Thick Poha or Aval or Rice flakes
  • ½ cup Tomatoes, finely chopped
  • 1-inch Ginger piece, chopped
  • ½ tsp. Turmeric powder
  • ½ tbsp. Lemon juice
  • Cilantro, for garnishing
  • ½ cup Peanuts
  • ½ cup Carrots, grated
  • 2-3 Spring Onions, chopped
  • ½ Capsicum, chopped

 

For Seasoning:

  • 2 tbsps. Oil
  • ½ tsp. Mustard Seeds
  • ½ tsp. Cumin seeds
  • 2 nos. Red Chillies
  • 8-10 nos. Curry leaves
  • 2-3 nos. Green chillies, chopped
  • ¼ tsp. Asafoetida

 

Method

  • Wash the poha in a colander under running water.
  • Gently press the poha to remove the excess water and keep it aside in a plate.
  • Roast the peanuts until they are well cooked and set aside.
  • Heat oil in a pan and splutter the mustard seeds.
  • Add the remaining seasoning ingredients and fry.
  • Next add chopped onions and ginger and fry till it becomes soft and then add turmeric powder.
  • Again add chopped carrots, capsicum, spring onions and tomatoes. Mix, cover and cook it for 3-4 minutes on low heat.
  • Meantime with the help of fork, gently fluff up the poha and add to the onion-mixed vegetable mixture.
  • Stir gently and add salt to taste.
  • Add lemon juice to the mixture and stir well.
  • Garnish with cilantro.
  • Serve hot with curd or any raita.
