Raw papaya carrot raita is a yoghurt based vegetarian side dish. This dish is made with grated raw papayas and carrots and can be served with rice or rotis. Well, you can use this thick creamy raita as bread spread as well. It keeps well in the fridge for a couple of days and even in room temperature for a couple of hours in summers. In winters, it can stay well in room temperature for a day.
This is one of my favourite raitas that I make whenever I get raw papayas. As we all know the numerous health benefits papaya has….try to include it as much in your diet as you can. Let’s start with the raita preparation…..
Ingredients
- 1 cup Carrot, grated
- 1 cup Raw Papaya, grated
- ½ cups Red Onions, finely diced
- ½ cup Coriander leaves, finely chopped
- 2 tsp. Cumin seeds
- 2 tsp. Green chillies, finely chopped
- Salt, to taste
- Pepper, to taste
- 2 tsps. Oil
- 1 ½ cups thick fresh Yogurt
Method
- Heat the oil in a pan and add in the cumin seeds. Wait till they crackle and then add in the chopped green chillies.
- As the green chillies get fried, add in the chopped red onions and fry them with a little salt sprinkled over it. Keep stirring till the onions get translucent.
- Add the grated raw papaya and carrots, salt to taste and stir fry for a couple of minutes. Keep stirring till the grated vegetables start wilting and not really mushy cooked.
- Add the pepper powder andchopped coriander leaves, mix well and remove from stove.
- Let this cooked mixture cool down to room temperature.
- Now add the yogurt and whisk well to mix everything together. Adjust seasoning and serve at room temperature. Some people like such raitas chilled, so chill it before serving if you are one of them.
