This mushroom potato curry is an absolute favourite at my home and makes regular appearance at our dining table. It is a perfect combo with rotis, chapathis, pulao varieties. I generally make this curry mild, more like a stew. The addition of coconut milk makes this dish creamier and more delicious.
Palak Paneer is one of the most popular paneer dishes made in North India. This yummy curry is made from blanched spinach and soft paneer cubes. You can also shallow fry the paneer cubes but I prefer not to fry them. I do not add any spices, all the flavour of the curry comes from cumin seeds, garlic and chillies. Dal is very simple and easy to cook. Dal Tadka is a variation of the normal dal recipe with simple tempering of onion and tomatoes and lots of spices. When you give extra tadka with red chilli and cumin it becomes more flavourful and aromatic. In this recipe, I have soaked moong dal and chana dal in water the previous night. The next day I cooked the dals with water and salt. You can add onion and tomatoes tempering and serve this hot dal fry with paratha or phulkas.
