This recipe is a very easy chicken curry recipe. You can make this dish with or without coconut milk. The gravy of this dish thickens as it cools so the consistency of the gravy has to be adjusted before it is removed from the flame.

This chicken curry makes a perfect accompaniment for rice, rotis, appam, idiyappam etc. For appam and idiyappam it is best to make this chicken curry with coconut milk so it can be used like a stew.

Kerala style Netholi fry is a simple and tasty South Indian dish which can be served as a starter or a side dish. Netholi, otherwise called Kozhuva or Anchovy is a small salt water fish, which is a rich source of calcium and minerals. It is best to leave the fishes marinated for some time, say 30 minutes, before you fry the fishes so that all the masala gets fully absorbed into it and enhances the flavour. You can also add curry leaves while frying the fish which will give a unique flavor and taste to the dish.

Muringayila mutta thoran is a healthy and delicious stir fry made with drumstick leaves and eggs. Muringayila, also called marum leaves in Thai are drumstick leaves , which are highly nutritious. It is rich in iron, protein and vitamins. You can add grated coconut to this stir fry too. Seasoning with mustard will also give a different taste to this stir fry recipe. This stir fry will go well with rice and moru curry.

Prawn capsicum fry is a recipe different from the Kerala style prawn/ konju fry. The addition of bell peppers to this recipe gives it a different yet appealing taste. Prawn capsicum fry is a spicy, hot and totally delicious dish, which can be served as a side dish or a starter for parties. I made it completely South Indian style, but there are so many version of this recipe. For people who like that extra bit of spice you can add some crushed pepper and toss the curry in the end.

Vegetable stew is an easy to make lightly spiced, delicate and aromatic stew with mixed vegetables, coconut milk and spices. This stew is a popular stew from the kerala cuisine and is generally served with appam, idiyappam etc. as a side dish. You can add vegetables of your choice to this stew, but I generally prefer vegetables like potatoes and carrots only. I find it easier and quicker to pressure cook the vegetables than cooking them in a pan. I always have ready to use coconut milk available at home for stews or making gravies, which is very convenient.
