Smoked salmon avocado bruschetta is a light but luxurious snack of thin and crispy Italian bread topped with avocado and smoked salmon. I used a thin pre-packaged ‘bruschetta’ bread but really you can use any kind of toasted flat bread you like.
You can also use feta cheese with this recipe. If using feta cheese, mash the avocado and feta cheese and squeeze in some lime juice….yumm….absolutely delicious….
Smoked salmon avocado bruschetta makes a perfect starter with a glass of chilled white wine or champagne! Now, time to try this simple but elegant appetizer….
Ingredients
- 1 ripe Avocado
- Few slices of flat fresh Italian or similar bread e.g. bruschettini
- 2.5 ounces thin slices of Smoked Salmon
- A few fresh salad leaves, a mix baby spinach, dill or coriander
- 1 Lemon
- Freshly ground black pepper (optional)
Method
- Cut the avocado to slices after removing the skin and the seed.
- If you desire, in a medium dish, you can mash up the avocado, then grind in some freshly ground black pepper and a squeeze or two of lemon juice to taste. Give it all a final mash and mix.
- Toast your bread in a toaster, then top with the avocado mixture, a slice of salmon (fold it a little if necessary), a few salad leaves and a small slice of lemon.
- Squeeze another bit of lemon over the top if you like.
- Serve smoked salmon avocado bruschetta immediately…..
