Spinach Dosa

SPINACH DOSA

Spinach Dosa is a healthy and delicious green leafy vegetable pancake. You can substitute spinach for any greens of your choice. Spinach is called ‘Palak’ in Hindi. Palak dosa or Spinach dosa is an instant dosa recipe which doesn’t require much preparation. This green dosa looks very tempting and tastes awesome. It can be made with leftover Dosa batter or by using different types of flour. To make with different types of flour, you can add coarsely ground wheat flour, rice flour, oats flour or ragi flour to make this instant dosa. Oats flour is optional but it tastes awesome in this recipe. For this option you can add curd or butter milk to make the batter.

Ingredients

  • 1 cup Spinach or Amaranth leaves, chopped
  • ½ cup Coriander leaves, chopped
  • ¼ cup Curry leaves, chopped
  • ½ inch Ginger piece, chopped
  • 2 Green chillies, chopped
  • 2 cups Dosa batter
  • 1 tsp. Cumin seeds
  • ½ tsp. Asafoetida
  • Salt, to taste
  • Oil, as required

Method

  • In a blender, combine together spinach, coriander leaves, curry leaves, ginger, green chillies and 1 cup dosa batter. Grind to form a smooth paste. Transfer this to a bowl, add cumin seeds, asafoetida, remaining dosa batter and salt to taste.
  • Mix well until combined.
  • Heat a tawa/dosa pan. Lightly brush it with oil. Spread a ladle full of batter on the tawa to form a thin and large circle. When the top looks dry, brush it with oil or ghee. Cook until it turns golden and crisp. Serve hot with chutney.
