Uzhunnu Vada aka Medu Vada or Urad Dal Fritters is a popular south Indian snack usually served with Masala Dosa or taken as a breakfast itself. Here I am sharing some tips to improve the texture of vada……..To make vada crispier, add 1 tbsp of rice powder to the batter and mix well. Keep it idle for 10-15 minutes.
To shape the vadas properly, always wet your hands before shaping each one of them. Keep a cup of water near you and wet your hand with this. This will prevent sticking of the batter to your hands.
Ingredients
- 2 cups Black Gram Dal/ Urad dal
- 1 sprig Curry Leaves
- 2 nos. Green chillies, finely chopped
- 3-4 shallots, chopped finely
- 2 tsp. Ginger, finely chopped
- ¼ tsp Asafoetida, powdered
- 1 tsp Pepper corn
- A pinch Soda Bicarb
- Salt to taste
- Oil, for frying
Method
- Soak black gram dal and black pepper in water for 2 hours.
- Drain the water from it and grind to a fine paste till it is creamy, but make sure it is not watery.
- Add to batter, green chillies, ginger, asafoetida, shallots, curry leaves, soda bicarb and salt and mix well.
- Roll batter in to small balls and flatter in palm. Make a small hole in the middle.
- Heat oil in a deep frying pan and immerse the vada balls in it. When it turns golden brown, remove and drain oil.
- Serve with coconut chutney.
