VEGETABLE RAITA

This mixed vegetable raita is simple, easy and quick to make. Chop up the veggies of your liking and mix everything with yogurt and spices. And it is ready!!

Usually everyone prefers to make raita during the hot weather or summer season since it is made from yogurt and it has cooling properties. But at home we make it all year around. The choice of vegetables is up to you. You can skip any if you do not like it. Or add any other like grated beetroot, fried potato etc.

Always serve raita chilled. So, use chilled yogurt straight from the refrigerator.

I made this vegetable raita few days back again. This time I reminded myself that I have this post lying in my draft for a while and never posted here. So here I am clicking on publish button today.

Ingredients

  • 2 cups Plain yogurt, chilled and whisked
  • 1 tsp. Roasted cumin powder
  • 1 tsp. Chaat masala
  • 2 small Green chillies, chopped
  • 1 cup Carrots, chopped
  • 1 cup Red onion, chopped
  • ½ cup Tomato, chopped
  • 1 cup Cucumber, chopped
  • 2 tbsps. Cilantro or coriander leaves, chopped finely
  • Salt, to taste

Method

  • Take a bowl. To the bowl, add chopped onions.
  • Next add chopped carrots, cucumber, chopped tomatoes and green chillies.
  • Again, add spice powders – cumin powder and chaat masala. Add salt to taste.
  • Sprinkle chopped coriander leaves and dry mix everything.
  • Add chilled yogurt in a bowl and whisk till it gets smooth.
  • To the mixed vegetables, add the whisked yogurt. Stir well to combine.
  • Remove it to a serving bowl, garnish with mint leaves.
  • Enjoy as a side dish with pulao or biriyani or have it as a meal on its own.
