Atte Ka Laddoo

WHEAT LADDOO/ATTE KA LADDOO

Wheat laddoo also called Atte Ka Laddoo in Hindi, is a rich, sweet dessert or snack. There are so many variations of laddoos. Earlier, I have shared posts on cornflakes laddoo, rava laddoo, dates and nuts laddoo, besan laddoo, ragi laddoo, barley laddoo etc. They are made using different flours, milk and nuts.  Wheat laddoo is commonly made in every house hold with some variations. It is a simple recipe with few ingredients, but the texture and the taste are amazing!

This recipe can be used to make 18 laddoos and will serve 6.

 

Ingredients

  • 1 cup whole wheat flour
  • ½ cup Ghee or clarified butter
  • 1 cup Sugar, fine
  • ¼ cup Almonds, roughly crushed
  • ¼ cup Raisins
  • ¼ tsp. Cardamom powder

 

Method

  • Dry roast atta/wheat flour, on low medium heat until lightly coloured. This should take about 6-7 minutes. It is important to keep stirring continuously, to roast the wheat flour evenly.
  • Separately, in a pan add ghee and roast almonds, raisins and for about 3 minutes.
  • Add ghee to the dry roasted wheat flour and keep roasting, keep stirring continuously, until atta will be light brown in colour and will have the sweet aroma of roasting. This should take about 4-5 minutes.
  • Turn off the heat and transfer the mix to another bowl. Wait until the mix is lightly warm, add sugar and cardamom powder to it. Mix well until sugar is thoroughly mixed with the other ingredients.
  • To make the laddoos, take about 2 tablespoons of the mix into your palm. Gently press the mixture between your palms to form a smooth, round ball. You can adjust the size of the laddoos as per your preference.
  • Delicious wheat laddoos are ready!!
  • Leave the laddoos on a plate to cool to room temperature before putting into a covered container. The laddoos can be stored in an airtight container for 2 to 3 weeks.
